My husband Ken was a citrus farmer as a young man - his
family still owns an orange grove in Exeter,
California.His motto is “an orange a
day” for good health.I created
this salad as a way to feature his favorite fruits.
1 pink grapefruit and 1 large orange - peeled, de-veined
& deseeded
4 kiwis, peeled
5 T. purchased raspberry vinaigrette
1 t. honey, warmed
4 oz. fresh mixed baby lettuce
In a medium sized bowl, cut each grapefruit or orange
wedge into 2-3 bite-size pieces. Cut each kiwi into 8 pieces. Toss with 2T
raspberry vinaigrette and honey. Set aside for up to one hour at room
temperature. Toss greens with remaining vinaigrette and divide onto six
plates. Spoon the citrus fruit mixture onto the center of the greens. Serve
six friends this refreshing salad along with our Sauvignon Blanc – it
will surely drive away the winter blues!
